Easiest Banana Bread Ever!

Simple to prepare, yet delicious!
Ingredients
  • 2 eggs
  • 1 cup granulated sugar
  • 1¼ cup all purpose flour
  • 2 teaspoon baking soda
  • 3 ripe bananas
  • ½ stick of melted butter
  • 1 cup of chopped walnuts and/or chocolate chips (optional)
Instructions
  1. In a medium sized bowl, beat the eggs and sugar until combined. At this time melt the butter on a low flame until it is almost completely melted. Add the butter to the egg and sugar mixture. Stir in the flour and baking soda to the mixture. Once the mixture is completely combined, add the peeled bananas and mash in to the mixture using a pastry blender or a fork.
  2. Once the mixture is ready, prepare your mini loaf pans using parchment paper or a very light spray of baking spray.
  3. Pour mixture evenly into each loaf pan, filling them about half way.
  4. Bake at 350 degrees for 25 minutes.
Notes
If using one regular sized loaf pan, bake for approximately 40 minutes. You'll know it is ready when a toothpick is inserted into the middle of the loaf and comes out clean. If you are baking in muffin pans, bake for approximately 25 minutes. I suggest using the silicone cupcake liners below.
