Butternut Squash Soup

- 1 whole butternut squash, peeled, seeded and cut into chunks
- 1 sweet apple of your choice, peeled, cored and diced
- 1 small onion, peeled and chopped
- 2 cups of vegetable stock
- pinch of oregano
- pinch of cayenne pepper
- pinch of salt
- 2 tablespoons orange juice
- pumpkin seeds or peanuts for garnish (optional)
- In a large, heavy saucepan over medium heat, combine the squash, apple, onion, broth, oregano and cayenne pepper and bring to a boil uncovered.
- Once boiling, reduce the heat to medium - low, cover it and let it simmer for 30 minutes.
- Add the orange juice and salt.
- Remove the soup from the heat and let the soup cool for a few minutes.
- Using a hand mixer, puree the soup until smooth.
- Garnish and serve immediately.
