Zucchini Muffins

Ingredients
  • 3 cups flour
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 stick butter (melted)
  • 3 tsp vanilla extract
  • 3 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3-4 cups grated zucchini
  • 1-2 cups chopped walnuts (optional)
Instructions
  1. Sift the flour, baking powder, baking soda, salt and cinnamon into a large bowl.
  2. Beat the eggs, sugar, vanilla, melted butter and oil together in another bowl.
  3. Add the sifted ingredients to the creamed mixture, and beat well.
  4. Stir in the grated zucchini and add the walnuts until well combined.
  5. Pour batter into prepared muffin pan.
  6. Bake for 25 minutes at 350 degrees.
  7. Remove from pan and completely cool.
Notes
If you want to omit the butter, make sure you use at least 4 cups of zucchini or else the muffins will be dry.
